DIY taco mix

guys. do not judge me for not blogging durning the summer. i have been busy doing a whole bunch of nothing.  but i do bring you a recipe from our dear friend josephine.  TACO MIX!
have you bought it from the store? and now it's all you know? and you're addicted to the sultry seasonings containing MSG/ weird things that you can't spell? now you can stop this non sense. this recipe is so easy and seriously, so delicious. i ate it for one whole week after josephine made it for me.  never got old!

jo says: What makes my beef stand out is the DIY taco seasoning. I guarantee it tastes just like how you remember it... You know, from the store-bought package. There are no gimmicks in this particular seasoning, just real spices that your body can process. And it is very easy to put together. Everything is in your pantry!

(This beef taco salad recipe was adapted from food network's Alton Brown)

DIY taco seasoning
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons cornstarch (for those who are allergic to corn, you can sub with tapioca. It works just as well.)
1 teaspoon table salt
1 1/2 teaspoons paprika
1 teaspoon ground coriander
1/8 teaspoon cayenne pepper

Put all of the ingredients in a small jar with a lid and shake to combine. Store in an airtight container for up to 1 month.
Yield: About 1/4 cup plus 2 tablespoons

josephine says: i usually make beef with this seasoning in taco salad. I know it's old news...everyone makes this and you've had it all growing up probably. But we just seemingly can’t get enough of it. It's easy to make and a crowd pleaser! Here's how i make my beef.

1/2 onion, finely chopped
1/2 red bell pepper, finely chopped (this adds a slight sweetness to the spicy flavor. Totally essential! Also, did you know that one red bell pepper has 3 times the Vitamin C as an orange?!)
3 cloves garlic, minced
2/3 cup chicken stock, home made or store-bought
1 lb lean ground beef, regular or grass-fed
1 portion(1/4 cup + 2 tablespoons) DIY taco seasoning

Heat 1 tablespoon oil in a cast iron skillet over medium high heat. Add the ground beef and cook until lightly browned, then season with 1/4  teaspoon salt. Stir occasionally to break up the meat. 
Place the cooked beef in a bowl lined with paper towel to drain the fat. Set aside. Add the onion and bell pepper to the skillet and cook until softened and lightly browned, about 3 to 4 minutes. Add the garlic and cook about 30 seconds. Add the cooked beef back to the skillet, and add 1 portion of the DIY taco seasoning and chicken stock. Bring to a simmer and cook, uncovered, until the sauce is slightly thickened, about 3 minutes. Serve.

for lunch through out the week!
Now get out all your “fixings” and start building your taco salad bowl! Or, if you are anything like me, you would spoon up some of this perfectly-seasoned meat on a homemade tortilla, sprinkle some shredded yellow cheddar, and squeeze some fresh lime juice. amazing!

  3. This is SERIOUSLY so perfect! I've been making tacos a lot over here in Nepal, and when my Trader Joe's seasoning started running out I was wondering if I could make it. And here you are, with your little recipe! Love it! Thanks!

  5. My mom gave me a DIY taco seasoning mix which is PERFECT! My hubby eats tacos (and anything Mexican) like it's going outta style. For real! It's CRAZY!
