anyway, i firmly believe the best dessert/breakfast you can serve is the unassuming cookie. it's not fussy, not trendy, and sometimes can be turned into biscotti's if you burn them. it's happened. now, i usually stick to my basic cookie recipes found here. but i do love a good pumpkin infused sweet treat every now and again. if not even to help you get out of the norm just for a touch. stare at a leaf while you eat this cookie and your mind will explode with autumness.

Pumpkin chocolate chip cookies
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup white sugar
- 1 cup light brown sugar
- MIX
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 CUP canned pumpkin puree
- MIX
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons pumpkin pie spice (or cinnamon and nutmeg...whatever you have)
- MIX
- 1 bag chocolate chips
- MIX yet again.
spray your pan. scoop out. bake at 350 for 14 minutes. this is for large cookies. they do need to bake longer than a regular cookies for sure. all that pumpkin makes them quite gooey if you don't.
best served in the morning while your kids are running around like wild maniacs.
