pumpkin + butter = magic

we had some people over for dinner or something and someone mentioned breakfast. layne was all, my mom doesn't eat a healthy breftast. she eats a cookie.

i said, yes that is true. but let us not judge, my child. and also, do you have homework maybe to run along and do?

anyway, i firmly believe the best dessert/breakfast you can serve is the unassuming cookie. it's not fussy, not trendy, and sometimes can be turned into biscotti's if you burn them. it's happened.  now, i usually stick to my basic cookie recipes found here. but i do love a good pumpkin infused sweet treat every now and again. if not even to help you get out of the norm just for a touch. stare at a leaf while you eat this cookie and your mind will explode with autumness.

Pumpkin chocolate chip cookies


  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup white sugar
  • 1 cup light brown sugar
  • MIX
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 CUP canned pumpkin puree
  • MIX
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice (or cinnamon and nutmeg...whatever you have)
  • MIX
  • 1 bag chocolate chips
  • MIX yet again.
spray your pan. scoop out. bake at 350 for 14 minutes. this is for large cookies. they do need to bake longer than a regular cookies for sure. all that pumpkin makes them quite gooey if you don't. 

best served in the morning while your kids are running around like wild maniacs.
