my husband is itching to get outdoors and be active again after this ridiculously long and cold winter. time out: one of the main differences between my husband and i is that he loves extreme sports and challenges, whereas i love extreme napping, extreme crafting, extreme shopping, and general indoorsy-type-stuff...you know, fun things. don't get me wrong, i love taking long walks and playing outside--when the weather is tolerable. anyway, on this particular day, he couldn't handle the indoors any longer. he told me, "the weather is nice, we're going for a ride."
oh, i'll bundle up and take lila on a walk too since the weather is so NICE.
lila and i ended up going around the block in our jogger stroller and walking ever so briskly back to the house at a pace i will call, walk-jogging-frantically-almost-running. it was freaking freezing and not fun. lila kept looking back at me like, "please mother, save me from the elements before people call SRS as they drive by"
anyway, an hour later(and after i almost got in the car to find them), daddy and layne arrived home looking like they traveled to antartica and back. wow. really, babe, was that fun?
so speaking of layne, he is so funny these days. he makes all kinds of faces and has so much personality. he saw me making these sweet-potato bars and got really excited. check out those faces. where does he get that from? what? not me...
now these are supposed to be pumpkin chocolate chip bars, but i accidentally grabbed the wrong can and used sweet potato puree instead. this is typical of my behaviour, but at least it was a happy accident. they were really delish and slightly healthy? i don't know if that statement is even true. but go with it. and make sure to use your kitchen aid...
here is the recipe for sweet potato bars:
2 cups flour
1 tbsp allspice(or cinnamon if you don't have allspice)
1tsp baking soda
1 tsp salt
2 sticks butter
1 1/4 cup sugar
2 tsp vanilla
1 cup sweet potato or pumpkin puree
bag of chocolate chips
mix first section together.
cream butter, sugar, vanilla together.
mix in puree.
(you might have to get the spatula in there and get the butter off the sides)
mix in egg.
add dry mix to this.
when combined, add chocolate chips.
in a greased 9X13 glass pan, bake at 350 for 30-35 min(or until center isn't too gooey)
